Strawberry & Basil Sparkler

Bubbly, herbaceous, and refreshingly sweet—this Strawberry & Basil Sparkler is your go-to Easter sip. Non-alcoholic, vibrant, and built for springtime clinks.

Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • ¼ cup fresh basil leaves
  • 1 tbsp honey or monkfruit sweetener (optional, depending on berry sweetness)
  • 2 tbsp fresh lemon juice
  • 1 cup cold water
  • 1–1½ cups club soda or sparkling water
  • Ice, for serving
  • Optional garnish: extra basil leaves, strawberry slices, lemon wheels

Instructions

  1. In a small bowl or cocktail shaker, muddle strawberries and basil with lemon juice and sweetener (if using) until fragrant and juicy.
  2. Add cold water and stir or shake well to combine.
  3. Strain into a glass filled with ice (or pour everything in, for a rustic look).
  4. Top with club soda or sparkling water.
  5. Garnish with fresh basil, strawberry slices, or lemon wheels as desired.

Chef Paddy’s Tips

  • Make a pitcher: Scale it up ahead of time—just hold the bubbles until you're ready to serve.
  • Boost basil flavor: Smack the basil leaves before muddling to release their natural oils.
  • Swap the fruit: Blackberries, peaches, or raspberries also work great—use what’s fresh.
  • Zero-proof twist: Swap club soda for ginger beer for a spicier, mocktail version.

Let’s cook with heart and hustle.
