Amen Corner Tarragon Peas

Ingredients
- 2 cups fresh or frozen green peas
- 1 tbsp unsalted butter
- 1 shallot, finely diced
- ¼ cup heavy cream
- 1 tsp fresh tarragon, finely chopped (or ½ tsp dried)
- Salt and cracked black pepper, to taste
Instructions
- In a sauté pan, melt butter over medium heat.
- Add the diced shallot and cook for 2–3 minutes until softened and fragrant.
- Stir in the peas and a pinch of salt. Cook for 3–5 minutes until heated through but still bright and vibrant.
- Add the heavy cream and stir gently. Simmer another 2–3 minutes until lightly thickened.
- Stir in the chopped tarragon just before serving. Season with salt and cracked black pepper to taste.
