Amen Corner Tarragon Peas

Ingredients

  • 2 cups fresh or frozen green peas
  • 1 tbsp unsalted butter
  • 1 shallot, finely diced
  • ¼ cup heavy cream
  • 1 tsp fresh tarragon, finely chopped (or ½ tsp dried)
  • Salt and cracked black pepper, to taste

Instructions

  1. In a sauté pan, melt butter over medium heat.
  2. Add the diced shallot and cook for 2–3 minutes until softened and fragrant.
  3. Stir in the peas and a pinch of salt. Cook for 3–5 minutes until heated through but still bright and vibrant.
  4. Add the heavy cream and stir gently. Simmer another 2–3 minutes until lightly thickened.
  5. Stir in the chopped tarragon just before serving. Season with salt and cracked black pepper to taste.
