Wicked Easy Boston Cream Pudding Cups

Inspired by the classic Boston Cream Pie, these Wicked Easy Boston Cream Pudding Cups layer smooth vanilla custard, crushed cookies, and glossy dark chocolate ganache—all built for a cold, creamy bite that hits every note.

Ingredients

Vanilla Pudding Layer:

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 2 cups whole milk
  • ½ tsp vanilla extract (optional, for deeper flavor)

Cookie Base:

  • 1 cup crushed vanilla wafers or graham crackers

Chocolate Ganache Topping:

  • ½ cup heavy cream
  • 4 oz Taza dark chocolate (60–70%), chopped
  • Pinch of kosher salt

Optional Garnishes:

  • Whipped cream
  • Shaved chocolate

Instructions

Make the Vanilla Pudding:

  1. In a mixing bowl, whisk together pudding mix and cold milk. Add vanilla extract if using. Whisk until smooth and thickened—about 2 minutes.
  2. Chill in the fridge for 10–15 minutes.

Crush the Cookies:

  1. Place cookies in a zip-top bag and crush into coarse crumbs. You want texture—not dust.

Make the Ganache:

  1. Chop chocolate and place in a heat-safe bowl.
  2. Heat cream until just steaming (not boiling) and pour over chocolate. Let sit for 2 minutes.
  3. Whisk until smooth, glossy, and fully combined. Stir in a pinch of salt.

Assemble the Cups:

  1. In jars, ramekins, or dessert cups, layer: 2 tablespoons cookie crumbs, 3–4 tablespoons vanilla pudding, 1–2 tablespoons ganache.

Chill and Garnish:

  1. Chill assembled cups for at least 30 minutes before serving.
