Cucumber Basil Spritz

Ingredients (Serves 4)
For the Basil Syrup:
- ½ cup fresh basil leaves (packed)
- ½ cup water
- ½ cup sugar or agave
For the Drink:
- 1 English cucumber, peeled and sliced
- Juice of 2 limes
- 1½ cups cold water
- 1½ cups plain seltzer or sparkling water
- Crushed ice
- Basil leaves or cucumber slices, for garnish
Instructions
Make the Basil Syrup:
- In a small saucepan, combine water and sugar. Heat until sugar dissolves.
- Remove from heat, add basil leaves, and steep for 10–15 minutes.
- Strain out the basil and cool completely.
Blend the Cucumber Base:
- In a blender, combine cucumber slices, lime juice, and cold water. Blend until smooth.
- Strain through a fine mesh sieve into a pitcher.
Mix the Spritz:
- Stir in the cooled basil syrup. Taste and adjust with extra lime or water if needed.
- Chill before serving.
Serve:
- Fill glasses with crushed ice.
- Pour cucumber-basil mixture ¾ of the way up the glass.
- Top with sparkling water and garnish with fresh basil or cucumber ribbons.
