These sweet and tangy Cherry Pecan Pie Bars combine a sweet and tangy cherry filling with crunchy pecans, perfect for your Kentucky Derby Day party!
Ingredients
1 1/2 cups all-purpose flour
1/4 cup granulated sugar
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1 large egg
1 tsp vanilla extract
1/2 cup pecans, chopped
1 cup cherry preserves
1/4 cup cornstarch
Instructions
Make the Crust: Preheat your oven to 350°F (175°C). In a large bowl, mix together flour, sugar, and salt. Cut in the butter until the mixture is crumbly. Press it into the bottom of a greased 9x9-inch pan. Bake for 15 minutes until golden brown.
Prepare the Filling: In a small bowl, combine cherry preserves and cornstarch. Stir until smooth.
Assemble the Bars: Spread the cherry filling over the baked crust. Sprinkle the chopped pecans on top.
Bake: Bake for an additional 25–30 minutes until the filling is set and the top is golden. Let cool before slicing into bars.
