Morning Hustle Tacos

These Morning Hustle Tacos bring together cheesy scrambled eggs, crisp bacon or breakfast sausage, fire-roasted salsa, and a creamy drizzle—wrapped in a warm tortilla that hits like a hug.

Ingredients

For the Tacos:

  • 6 large eggs
  • ¼ cup half & half or milk
  • 1 tbsp butter
  • Salt & pepper, to taste
  • ½ cup shredded sharp cheddar or pepper jack
  • 6 small flour tortillas, warmed
  • 4 strips bacon or ½ lb breakfast sausage, cooked and crumbled
  • ½ cup fire-roasted salsa (see recipe below)
  • 1 avocado, sliced or mashed
  • Hot sauce (optional)

Lime Crema (Optional):

  • ¼ cup sour cream
  • Juice of ½ lime
  • Pinch of salt
  • Dash of hot sauce

Instructions

  1. Cook the Eggs: In a bowl, whisk eggs, half & half, salt, and pepper. In a nonstick skillet over medium heat, melt butter. Pour in eggs and cook gently, stirring with a spatula, until just set. Fold in cheese at the end so it melts.
  2. Prep the Tortillas: Warm tortillas in a dry skillet or microwave. Wrap in a clean towel to keep soft.
  3. Make the Lime Crema: Whisk together sour cream, lime juice, salt, and hot sauce. Chill until ready.
  4. Assemble the Tacos: Layer each tortilla with eggs, bacon or sausage, avocado, a spoonful of salsa, and a drizzle of crema.

Chef Paddy’s Tips

  • Go veggie? Sub in crispy potatoes or sautéed peppers & onions.
  • Make it a tray bake: Prep all ingredients ahead and let folks build their own.
  • Extra hustle: Add hash browns or hot sauce right inside the taco. No wrong moves.
